Ok, some people have mentioned thrust reversers, they do not depoly untill its on the ground due to the extreme braking powers it has. The sounds you may be hearing is the hydraulic pump running which can add to a distinstive noise over the turbofan engine. It is used to operate the landing gears and set the flaps for landing. During this process the engine will slow down and various sounds will come from the body which will add to the engine's noise. The hydrualic pump is very noisy same with the hydualics moving the landing gears and flaps. Once the flaps deploy it changes the wind going over the wings same with the sound.

all car-aholics, people who are crazyy about cars, who obssess with cars, know all different sounds that different engines make. That statement was probably made by som eone who can differentiate between sounds of engines. In this case, that sound would be of a Boeing 757 landing. The sound is not necessarily of an engine breaking. It's just a specific sound made by the engine when landing.

ya whats it sound like? pretty hard to say. The engines dont have breaks. The engine can be used as a brake by redirecting thrust, thats why the engine goes into a higher RPM after landing. If the aircraft is coming in too low he will also give it more throttle.

Def. the landing gear coming down. Since their is a no form of drag on the belly of the plane, when the extend, that is the first (and only) source of drag on the bottom. The sound is the gear breaking the air (essentially drag).
