Usually just personal taste. The RAF did extensive tests to find the most visible colour for their low level training aircraft to reduce the hazard of in-flight collisions. As a result their trainers are now all painted - wait for it - BLACK! Surprised? Apparently it is the MOST visible against the ground - not white!!

Not an expert on the topic by any means but I believe the aircraft are painted in a scheme that will allow for high visibility and something neat at the same time... i dont think that emissions have anything to do with it... however, type of paint may as i do know that the weight of the paint for example on a 737 can excede 300lbs.

In the old days, American Airlines chose to go "no paint" silver to save the weight of the paint for its airplanes. Nowadays, I think they just go with whatever the marketing folks tell them looks good. Southwest used to have brown as its base color...now it's a much nicer blue. But many Southwest planes have "special" paint jobs like state flags or other pretty designs, which have nothing to do with the regular paint scheme.

As far as composite airplanes, I know there are some restrictions to what kind (and therefore what color) paint can be applied to them. Cirrus Aircraft used to be available only in white, but now there are some greys and other colors available. This is based on the composite material's interaction with the paint.
