For the marshaller, he should mimic the movement of the control surfaces with his hands as he faces the pilot. For instance, aileron movement with the control stick to the right, you would show your right hand pointing down and your left hand pointing upward. Same for the rudder(s) and slab/elevator except you use both hands together. The pilot will get the idea.
