Its called sky typing.Usualy done with 5 or 6 vintage ww2 trainers releasing smoke at the control of a main computer.The smoke is generated by oil injected into the exhaust manifold.
The oil is named korvis oil,used as a mold release agent for concrete castings.

It is called sky writing.The smoke is a diesel oil or paraffin based oil that is injected into the exhaust pipe. It burns white.
There is no computer to control it. The pilot merely switches the flow of the oil on and off as needed.
Any plane can have a smoke oil system installed, not just vintage trainers.
Generally I use my GPS to chart what I am doing or writing.
After a while it becomes second nature.
The oil does leave quite a mess on the airplane but it is well worth the effort.
Pretty cool during manoeuvres.
