The numbers on the controller indicate the altitude you want the cabin, or interior of the aircraft, to maintain. If you set it at say 11,000ft. the pressurization system will not begin to intentionally pressurize the interior of the craft until you pass through that flight level (FL) as you progress through that level, into thinner air, the outflow valve will be driven to the closed position to stop the pressurized air from exiting. By doing this the cabin altitude should stay within 50 to 75 ft of that set level. The reverse is true of decent in that the pressurization system will not begin dropping air until the aircraft goes below an altitude setting, in this instance 11,000ft. Now the pilot and copilot can control the pressurization of the aircraft during the flight by increasing and decreasing the altitude of the cabin and as luck would have it the controls are sensitive enough to prevent hurting anybody on board.
