How does an aircraft boneyard work?

there is a jumbo jet boneyard here in tucson goes on for miles, 1000+ have disassembled jumbo jets, row after row of them.
with an auto junkyard, people go and buy starter motors, doors, fenders, etc,
but i cant imagine someone with a jet going to this boneyard and asking for a new wing for a 747?
why don't they melt down, recycle all those montrosities?
