Have a huge wallet? An LS7 would fit. If you want to go V8 still a supercharged 302 is cheaper and maintains a pretty decent balance as well.
Your best bet for maintaining low weight, big power and easy of build is just to build the stock engine and go with a turbo kit from Flyin Miata or even RacingMazda. Keep in mind a 300rwhp Miata is quite fast. And on that same note - big wheels and Miata's don't get along at all. I have seen 18's, but they look really ridiculous (in a bad way) The best size is 15-16's tops. Also the lighter the weight the better. Too much unsprung weight is very noticeable.
