You'll usually get a better start if you rev it up and dump the clutch. But overdo this and you'll just smoke the tires.

Should i turn the overdrive off when towing trailers?

So I recommend some practice - go to the local dragstrip on test & tune night. It only costs $10 or 20 to enter, and they will use timing equipment to make all sorts of measurements of your car's performance. In particular, concentrate on getting a good 60' time.

rev it up to about 8000 rpms & slide your foot off the side of the clutch pedal.

What's the age limits for driving in Australia ?

It totally 100% depends on the car. A car like the HOnda S2000 which has good horsepower but veryt little torque actually gets the best launches if you rev the engine up to 9000 rpms and sidestep the clutch, Just dump it with your foot on the floor.
If I were to use that same technique with say, a mustang GT or pontiac GTO, all you would do would be to destroy some perfectly good tires in short order. You would go nowhere and leave alot of tiresmoke doing it. With a car like that you have to hold the revs somewhere around 2000 and then feather the clutch just a little as you smoothly apply the throttle untill you are wide open. That way you minimize wheel spin and get the best launch.

Where can I get hand controls installed on a van without paying $100/hr? I already have the controls.?

well dumping the clutch is never a good idea. you want to keep the tires from spinning as much as possible. you should rev up the engine but not all the way. depending on your car, this could be from 3000-6000 RPMs. you don't want to redline it and you don't want to give full throttle. you want to hold it steady at a certain RPM and let the clutch out until it starts to bite like you normally do, but you let the clutch all the way out quicker than you normally do. when you let it out all the way, give it some more gas and try to keep the RPM's at the same spot until the tires stop spinning. If you do this right, you should be giving it full throttle as the tires stop spinning
