How do you balance the clutch and oil in manual cars?

i have trouble when moving the car from gear 1 as the engine most of the time will stop running. are you supposed to release the clutch and not step on the oil or what?

It is the process for all the gears. With driving a stick shift, the only thing that will make you better is practice.
