I used to work for a car development centre, and had contact with some of the contract drivers.I don't know how they were found, but they all had at least 15 years driving experience, and most had more (the cars they were driving were very valuable to the programme - an accident could have delayed the launch of a new model by months). They were not permanent staff, so if they weren't needed because a car was off the road, they didn't get paid.
The driving they did was of a "mileage accumulation" type - just driving normally for many hours, including night shifts. The more advanced testing (ride, handling, NVH, performance, abuse, etc.) was carried out by the test & development engineers - if you want to become one of these you'll need a relevant engineering degree. I think some of the best contract drivers did get to accompany the engineers and technicians on the climate-testing trips to the desert and the Arctic.

Another possible alternative is to get a job driving test cycles for one of the test centres (Millbrook or MIRA), but again you'll probably need a lot of driving experience, and I can't imagine a night shift of 80mph round and round Millbrook's bowl is very interesting.
