Cruise ships spend a lot of time in very hot regions and white best reflects heat (other than silver, of course - and that would be hazardous to other vessels because of reflective glare, not to say prohibitively expensive to apply and maintain).

The color white has many advantages as follows: visiability, economically priced, and keeps cool in the hot sun. Especially the Caribbean and Gulf areas. I powder coat my pontoon boats white and the deck is covered with a white, rubber urethane that allows you to sit barefoot on deck in 100 deg F weather or even kick back with your legs on the gunwales or rails.

I tend to agree with the other answers, but just wanted to add that the world's most famous cruise ship, (sort of) the Titanic, was not primarily white in colour, I believe it was primarily black.
