Trim is used for drag on lower unit. For instance as you start out you want trim down so the lower unit (prop) is all the way in water so you get good start and water forces thru the prop. You then gradually trim up as you gain speed so that you can plane easier with less drag on the lower unit (although you don't trim up all the way). Trim also is used for entering and exiting the water so you don't mess up your expensive lower unit. It's also convenient for shallow areas and beaching your watercraft.
