All dealers keep fully loaded cars on their lots because they want you to want every feature the car has. Tell them you want one of their cars but you won't pay for the leather seats, the fancy stereo, ect. Those guys get a big bonus if they sell you a car off the lot, so you can usually coax them into giving you feature that you claim you don't want =).
The biggest thing is to get all the facts about that specific car, like how much other people have paid for it, and be very stern in making the salesman know you won't pay over a certain amount for the car.
