The number miles that are acceptable is up to you. I don't know if all cars have a certain number of miles from being driven at the factory onto the ship, then onto the truck then into the dealership. Tell them you want a car less than ten miles (if that's what you decide you want) and then go from there. Maybe it's possible, maybe you'll have to pay extra, maybe you won't get the color or options you want or most likely you'll have to wait for a new shipment to come in.
