I have 2 12" Kicker CVX subwoofers and a Kenwood Excelon Amp. Do I need 2 of these amps to get max power?

How can i find the RMS rating on a AMP like this one? that doesnt say how much RMS its putting out?

Every time I hook up my 2 amps my car shuts down how can i fix this so my amps and car work.?

Do I need two amps because I don't think the subs are hitting at max power?

no the cvx is a good sub i have 6 but dont push them to the max the rubber gets loose its good to keep them in there rms power rateing but don push them hard trust me u cool and keep them cool thay blow easy if that get hot

If you want to max the subs out, then yes that amp is only enough to push one. If you want them to sound better than they do now, your probably want to split the amp to both by crossover methods. so basically you would have the amp wired to push full amped power to each sub...which with those numbers would probably run the subs at or around RMS.
