The guy at the Rockford store told me the 2 channel because it had less ohm..and the less ohm the more bass you get..is that true?

Read the specs on the amp and get the right sub,. Mono's usually output more power since it's only a single sub. while 2 channels are usually capable of running at lower Ohms. Again if there is only 1 sub, do a mono unless they have a really low resistance sub.
If you get dual subs then you can bridge them and get the lower Ohms on a 2 channel Amp. IE 2 - 4 Ohm subs bridged to mono on a 2 channel sub will get you to 2 Ohm resistance and possibly the highest output of that Amp.
I want to put 7 amps in my truck totaling 6400 watts. Should I get a capacitor and how many farads?
If you do not match then you run the risk of blowing the speaker and or bad distortion.

A mono amp is geared for low end frequencies.Where the two channel will have a wider range of frequencies it can output. Generally, monos have frequencies rage from 20 to 250hz, where 2 channels range fom 20 to 1200.
Thats gonna cause alot of high end to come through the Sub, and you usually only wanna hear low end
Go for the mono. Mono amps are built strictly for bass and outputs only low frequency. Stereo amps will also run the sub, although the bass response won't be anywhere near as good as a mono amp.

Many newer amps these days all support 1ohm impedance, with some even accepting 1/2ohm. So you don't need a stereo amp just to get low impedance, The guy at the Rockford store should have been able to tell you this.
