I want to buy an amp that can put out at least 500 watts rms to only one sub for trunk room (i have a 4-8 ohm 12"sub). What would be the difference between a mono or 2 channel? If I can bridge the 2 channel, is that better?

Since there is only one sub, you can buy a 200-300 w RMS 2 ch amp. You should connect the sub in bridge mode [(+) terminal of ch1 with the (+) wire of the speaker, (-) terminal of ch2 with the (-) wire of the speaker]. this type of connection will almost double the amp power (400-600 WRMS), resulting in a louder bass. with low frequencies like bass, is not very important if is stereo or mono, the sound wave of bass are directionless, so it doesn't matter where you put it.

Be clear about what your sub is though - it's either 4 or it's 8 it's not 4-8 and it's not both. It's possible that it's 6 but that's rare. It also could be dual voice coil. If that's the case if each voice coil is either 2 ohm or 8 ohm you can still wire to behave like a single 4 ohm sub.
