Most dealers stock them, if they don't have one you can pre-order upcoming models. Will they let you test drive? Usually not the AMG model, but they will let you drive the same class to get the feel for it. Most AMG owners aren't terribly keen on receiving their car with any miles on it, especially having someone else drive their car, and most dealers aren't going to let a car that is that expensive go to waste.

Dealers commonly have AMG models in stock. Is your question will the dealer customize it? Depends on the dealer and what you mean by customize, i.e., wheels are common upgrades, but a vinyl top might not make the grade!
