You need to bleed the coolant perfectly because you have an airlock in the engine and so the coolant is not moving around the engine properly. The Fiat has two bleeders 1 is on the manifold and the other one is in the radiator. I had the same problem with my Punto and when I bleeded it, everything came to normal.
