A '66 Mustang had 289 in it! If you have a 302 it might be an engine swap, if so check the vin on the intake manifold to find out what year that engine is. This will insure you get that right carb. Ford has made the 302 (5 liter) for almost 40 years. I hope this helps.

On a dual exhaust, will having bigger pipes after the exhaust affect sound or performance?

The Holley model 1850 would be a good choice. Widely
available and priced right. Shop for a used one maybe.
At 600 cfm, it's a bit on the large size, but will work out OK
