What you want to do is advance the timing on the motor. I do this by ear but you can use a timing light. 3 to 4 degree's will make a big differance in your throttle response. One other step you can take since you've said you went to and old school motor is change the counter weights and springs under the rotor in the distributor cap. Some times this is a trial and error task and may need to be done with a couple of differant set up's. Try the advanced timing first.you could try changing the PCV valve and also checking to see that the ignition timing is not a little slow.

Check timing advance and tune the carb. If it is a manual an aluminum flywheel helps.
also considering refrencing the carb with that mtor, see if the cfm matches for that motor, if not consider getting a new carb
