My first guess as to what they stood for was Normal and Performance, but I can't really tell any difference in the car's performance or shifting either way. Is there an advantage to using one setting over the other that I'm just not noticing?

There should be a difference, as long as the control modules on the car are working properly, but unless you drive it really aggressively, the only difference you will probably notice will be when it shifts into passing gear. Yes, it lets the engine wind out more for faster acceleration. Keep it on norm for better gas mileage. You will only notice the difference if you really step on the gas.You are right and when in performance mode you'll have to floor the car and you'll see that it shifts at a higher rmp rate than the normal mode. This is about the only differance you'll get on this vehicle.
