It will take a year if you don't have a social life. As with most people your budget will determine how fast you go. Your best bet is to buy one as a second car in good shape that you can drive , and work on one section at a time. You can always sell it and get most of your money back if its still running . I have see basket case projects that the owner said "oh I wont quit " , but things do change , so be realistic.Where do all of the 2006 year model cars go, that are left over when all of the 2007's come out?
A lot also depends on the year. I sold my '71 fastback because I couldnt find the parts I needed affordably. 65-70 have the most options. You can buy pretty much every single part for a 65-68 except a VIN tag. Yes, you need a garage. And skill at welding. If you buy all the parts you need ahead of time, the 6 month time sounds right, but if you buy as you go, it could take a while. Have fun either way.how much does it cost to fix a fuel pump on a chevy cavalier (2002)?

If you have the time and money it will take about 1 year. You don't need a garage to work out of.But it would be better to do it in a closed area.if you have all the available restored parts, things should go smooth and should take about a year or two depending on how committed you are in restoring the car and your mechanical experience. Engine and drivetrain is the easiest for me. cleaning the whole car down to the bare metal and having it prepped for paint and repairing rust or dents is the long painstaking part of the restoration.
