There are 4 ways to go about doing this.In order of cost:
Pony keg and pizza (possibly free)
Find a vw club in your area. Most car enthusiast would much rather have a manual, and you might be able to find someone who has an auto. No matter how many people are in that club, if you made a deal for a peice for peice swap, guaranteed the majority of the club would help you. Depending on the number of people there, you could probably complete it in a day.
$500-900 (possibly free)
Buy a wrecked golf with a manual. All the peices you would need are there, and you might be able to make your money back if you sold your auto on ebay. if you did the work yourself.
$1000-2500
Buy a wrecked golf and find a trusted mechanic who can swap it out for you.
$2500-4000
take your car to the dealer and ask them to swap out the tranny.
This is going to be extremely expensive, because dealers charge twice what any private mechanic would.

2000 to 4000. sell it and buy what u wantenough to buy a diff car with auto. unless you can do it yourself. its alot of work.

My mechanic was going to charge me about $2k to change my jetta. I would think it would be about that much.Most of the other responders gave reasonable suggestions for doing such a swap. Since the tranny on these cars is computerized, it can be very involved to do such a swap. Also, these cars have a tranny cooler in the top of the tranny which needs to be plumbed into the radiator hoses (swap hoses to make this easier). My suggestion: KEEP THE 5-SPEED, maybe spending about $300 - $400 on a 5th gear upgrade and an additional $300 - $400 on a limited slip upgrade for the differential. These estimated costs are parts only. You'll lose fuel economy, power, and acceleration by downgrading to an automatic.
If you insist on swapping to an automatic, my favorite suggestion is to find a VW club in you area. Most true VW lovers prefer a stick and if a member of a club has an automatic, that would be a nice trade (either tranny or whole car).

If you do insist on the swap, keep in mind that you MUST flush and change your anti-freeze every 24 months (2 years), as well as your tranny fluid. Failure to do so can allow corrosion in your heater core, tranny cooler, and elsewhere. Corrosion can lead to a leak, and a leak in your heater core will spew antifreeze into the passenger compartment through the vents and defroster. A leak in the tranny cooler will cause tranny oil to enter the radiator and antifreeze to enter the tranny. That will require an engine flush and possibly a tranny rebuild, along with the replacement of the tranny cooler (a couple hundred bucks for the cooler alone).

Don't forget a new set of tires. The sticker on the door of my Golf GL says that 5-speeds use 185/60R14 tires. Automatics use a size larger, 195/60R14. Since the speed sensor your speedometer and odometer use is in the tranny (and there are differences in the final drive, etc.), if you have on tires which are taller or shorter, you're instruments will be dishonest with regards to your speed and distance driven. Do you want your odometer to read 200,000 miles when you've only driven 180,000? Do you want to get pulled over for speeding through a school zone when you thought you were 1 mph under? Which way the error will go depends on whether you go larger or smaller than factory on the tires.

P.S.: changing rim and tire sizes, it is possible to maintain the OUTSIDE diameter of the tires so as to keep accuracy on your instrument panel. This is for a different question, but if you go up in rim diameter and tire size, go down on aspect ratio and you can, possibly, keep OD and accuracy.
