I have 16X7OJ rims on my truck, I currently have 255/70/16 tires, I would like to know the largest tire i can safely run.

Those tires will fit. You say you want the "largest" tire you can fit, but what are you saying is large? Are you talking about width or height? The size you have, and the size you want are approximately the same height, but the size you want is 10 millimeters wider. Yes your fuel economy and braking will suffer IF the tire is heavier, but with such a little increase in width (which means little increase in weight), I guarantee you that you won't notice any difference. Nothing will go wrong with your bearings and all that mumbo jumbo. Don't worry about it.

You can run larger tires on that rim that will still be safe, but they won't wear properly. All tire dealers have specifications on proper rim width for the different tires they make.

The 16X7 rims will work fine with the 265/65R/16 tires. This is one combination that Ford offers on their vehicles. Ford doesn't recommend anything larger than the 265 series tires because that is what the vehicle is designed to have on it. When you go larger you will be adding stress to the transmission, gears and the motor. Also with the larger tires your brakes will wear much quicker. However, where there is a will, there is a way. You will be able to fit 33X12.50 tires on a 8 inch wide rim. A 10 inch would be recommended for a larger tire. Any larger and you could have problems hitting the fenders or ripping off the fender flares when you have the wheels turned and hit a bump or go into a driveway. 4Wheelparts.com has a tire fitment guide, helps find the right size wheels, and also lets you know how much your speedometer will be off at different speeds.

Lightnings run 265/65R18's I believe. The main thing is to stay with a 30 inch diameter tire or your ABS will go berserk.
I have 31.5 inch tires on my truck now and the ABS light comes on every time I drive it. I did some research and found out that Ford ABS sensors don't like non stock tire sizes. Someone told me that the sensor on the wheel and the speedometer go out of sync. So, it's OK to go wider but not taller or shorter unless you recalibrate the speedometer.

Go to the tire manufacturers web site, they usually tell you what size rim a tire will fit. I generally use www.tirerack.com but they don't cover all sizes.
