Oh dear - do you mean everywhere in the world? If so, there are an awful lot of mines, underground railways, ordinary railways in tunnels, road tunnels, buildings with cellars......
In London I don't know the exact number of Tube trains scheduled in peak hour service, but at a pretty rough estimate there are about 600. Only about a third of the network is actually under ground - but these are the bits with the most frequent service - so say 300 trains at any one time. Each train has an average of 7 coaches. It's probably reasonable to say there would be an average of 40 people per carriage. To this you must add the people on platforms, travelling to/from street. This might even double the total. You can do the sums! But if you want a more definite answer phone Transport for London travel enquiries on 0207 222 1234. They can probably give you the number of the Underground press office at the very least.
