Leave the M602 at Junction 2 and follow signs to Metro link Park and Ride. There is a large, free car park (with a security guard!) and you can catch a tram in to city centre - they are quick, easy and reliable. Much cheaper than parking in the centre!
Its called Ladywell Park and Ride, and the trams leave every twelve minutes. At peak time, a return to the City Centre is £2.50.
The second link also has a list of first and last trams - if you use this park and ride it would be the Eccles - Picadilly line.

There is no such thing as cheap parking in Manchester mate... trust me. You might be better finding a "Park & Ride" and getting the tram to the G-Mex... Eccles is a good choice. Trams are frequent enough and run 'til about 12:30-1:00 in the morning.

There is an NCP car park on Sheffield Street / Boad Street, just behind Piccadilly Station where cars can park for £3 per 24 hours.

From Store Street turn on to Boad Street. The multi-storey NCP that you see first on your left is much much more expensive. The good one is just past it, on the left, and is signposted "Big gig coach park".
