Why can't i get an MOT on a Sunday??

The garages are open...but only do MOT's Mon - Fri, is this not a bit short sighted because the next available slot isn't until thursday next week.

Its more likely your garage doesn't have a certified mot tester on the weekend. And its not shortsighted as you can renew your mot a month in advance and still keep its full 12 month value.
