Yes you can and no you don't need proof.
I brought my car when living at home. So my car was registered at that address at time of purchase.
I have since move out and brought a place of my own and myinsurance is under this new address. You are by law ment to also change your car registration details and send it to DVLA to get updated. But I have never got round t doing this to be honest.

Address shouldn't make a big difference, other than you want to tell your insurance company where the car will be at most often address that way they can charge you appropiately.

you do not need proof of address, but they will ask where it is garaged or kept
