As a practice you do not have to pay tax unless you decide to get a NJ title at which point they would ask for proof of the sales amount. I don't know how what taxes you might pay in Texas but you can usually use the blue book value(wholesesale) without too much trouble.

If you register it in NJ to drive it to TX, you'll have to pay the NJ tax. TX will give you a credit against your TX tax for the NJ tax paid, though.

To get your TX title and reg you'll need proof of TX residence, proof of ID (usually your TX license but you don't have to be licensed in TX to title and register a car), the assigned NJ title, proof of insurance and the completed TX title and registration application form. And the fees of course.
