I have a ML55 AMG 2000. It says super unleaded gas but I have heard that it is not nessasary to use super unleaded. If I use regular unleaded, wll that hurt the engine in any way?

The oil industry on the other hand have seasonally blended fuel to met their EPA guidelines that can cause more trouble than its worth. Yes, long term, it can hurt your engine. Read the owner's manual. It will tell you to use the super. If you can't find the super, get only as much regular as you need to get to the super, and drive there slowly, avoiding rapid acceleration and steep hills.
