Why does my Astra cut out at junctions?

Question:
I drive a 1.4 16v Vauxhall Astra LS, with a 51 plate. When I come to a junction I engadge the clutch and the car cuts out. This can happen a few times a day. Somtimes the revs drop to about 3000-5000rpm's, then they will shoot back upto about 15000rpm. I've had it to the garage and they've tried a different EGR valve but that didnt work and also a different kind of software for a gasket. Can anyone help?

May be idle air control valve or throttle position sensor. Take to a different shop as the first one was just replacing parts without doing any diagnosis.
