The dealer is great but they said they never heard of this problem, they replaced the instrument cluster today and guess what? It's still doing it.
I feel like I'm on candid camera when all of a sudden it starts beeping and cycling through (sometimes repeatedly)

Well if it is still under warranty, have them keep at it until it is fixed. That is their job. It isn't your job to continually deal with it.
