The bolt heads stretch as you tighten them. Like a spring or rubber band. If you stretch the bolts (elongation) they are overstressed and the extra stress the running motor puts on them might stretch them enough to break them or cause head gasket failure. Stripping, head distortion and block distortion are also considerations. If you already did it, best thing is to get a new head gasket, take the head off, check it for flatness, and measure the bolt lengths. Any that are now too long should be replaced.
