There's a red light on in my car saying that my coolant level is low?

Just because you have coolant in the radiator does not mean it is circulating. You may have a thermostat stuck closed. If this is the case, no coolant is getting into the engine passages. The sensor is often located near the thermostat to monitor this passage.

Check your thermostat. Also, check to see that your overflow reservoir is at the proper level.

could be, can you see the coolant? if it is full might be sensor, if it is half full and you round a corner it sloshes below the sensor.
