The car does have a slow leak in the radiator, and a slow oil leak, however I do check it frequently to ensure the levels don't get too low.

Driving into work this morning I allowed the car to warm-up for about 20 minutes. I get on the freeway, and inside a mile my car begins knocking loudly, a sound almost like a diesel engine that's idling, and eventually stalls.

i would surmise you may have thrown a rod. i hope not because that's what happened to me once when my oil pump failed on my 1995 ford contour.
the temperature gauge read within normal parameters as water was circulating in the water jacket and the oil light didn't come on as the oil level was fine but... no oil was being circulated.

there was no lubrication and one piston literally melted to the cylinder wall. the connecting rod beneath it broke and was banging around inside the cylinder.
i hope that isn't it because the only options were replace the motor under warranty or have it rebuilt under warranty. the warranty company opted to rebuild it even though that was more expensive for the (go figure ! !). it never seemed right again and i didn't trust it anymore so i traded it in shortly after.

The likeliness of having ice in the radiator is fairly likely. During Winter the best thing to do with antifreeze is mix it with half and half, half water, half antifreeze. That way it has a lower chance of freezing in the radiator. The temperature gauge is probably broke and needs replaced, possibility.
