What's the difference between Premium and unleaded gasoline?

Simply put the higher the octane rating the more slowly the fuel burns per given volume. As others have said, if your car runs fine on lower octane, without pinging or detonation (sounds like marbles rattling in a tin can) then go with that octane rating.

The longer the fuel is stewed at the refinery, the higher the octane. More powerful engines with higher compression ratios, (around 9:1) need higher octane fuel to keep from having detonation or pinging. My old 390 in my 1969 F-100 has a ratio of 9.2:1, and if i run anything less than 92 octane, it will run terribly. If yours runs fine on 87, then use 87. Anything more than that is just a waste of fuel and your money.

The only difference is it's octane rating. Octane ratings only reflect it's resistance to detonation(pinging) not how long it was "brewed" or how dirty it is or anything. If you have a high compression engine or a turbo/supercharged engine, you will need it to prevent damage to your combustion chamber. Most cars do not require it so don't give extra money to the makers if you don't have to.

Every car has a recommended octane from the vehicle or engine manufacturer, if you check the owner's manual you can find the manufacturer's recommendation. Most Chevy trucks are supposed to run on higher octane fuels, cars are often less, my Honda says 87 or higher.
