Check your feul injectors. At around 300,000 miles, such things as your oil pan, fuel filters, intake valves, feul injectors, etc. need to be checked often for any sign of engine damage (ie: metal flakes, discoloration). Go to any auto parts store an look for fuel injector cleaner, you just add the whole bottle the next time you fill your gas tank. As for not being able to get above 2500 rpm, that could be any number of things. Your best bet is to take it down to a trusted mechanic and have them tune your F-350. I reccomend using either a certified Ford dealship or Ford specialty auto shop.
