Question:
When you depress clutch while shifting, the rpms drop rapidly in an attempt for the motor to stall out. The only way to prevent this is to get on and off the clutch very rapidly. Sometimes, this does not even prevent this occurrence. Other symptoms include variations of idle whether hot or cold no matter, the rpms range from 800-1600 with none ever occurring the same from one stop to the next

Variable RPMs on a Saturn are consistent with a defective ECTS (Eletronic Coolant Temperature Sensor). I've unfortunately posted this same answer so many times here on Y! Answers... but is probably your answer. Here are instructions:

Could lean mixture cause even higher fuel consumption?
Another thing it may be, but is less likely, is fuel filter... If these do not solve your problem go to the Saturnfans.com Forums. You'll get your answer there one way or another.
UPDATE:
Also forgot to mention ignition problems... You may want to swap out spark plugs and wires (as even a preventative maintenance measure). It may also be ignition coils. Here are some links you might want to look in to:

sounds to me like this is the typical bad clutch pedal. ive seen this many times. try replacing the actual clutch pedal. this should solve the problem. usually though, once one goes bad they all do.. so id have the gas and brake pedals changed too. that way you know you wont be having any problems with either of those in the near future. hope this helpsLooking for location of Aspire oil pressure relief valve assembly.?
It sounds as though your throw-out bearing is frozen up. Too much drag is put on the engine when the clutch is engaged. You need a new clutch. The frozen bearing is causing extreme damage to your pressure plate. A new clutch pac includes bearing, pressure plate and clutch disc. Flywheel should be checked, and re-ground if necessary. My car starts, then eventually stalls...then it won't start again 'til next day?
When you press the clutch, the engine will return to idle. try holding it in longer, if the rpm goes to 0, it died, if not, that's normal. You are not giving it gas when you shift, and therefore, it will return to the idle RPM, as rapidly as possible given consideration to Newton's laws of motion. The varying idle RPM however is an issue, it could be the ECU or any number of components associated with the computer. Take it to a place that can do free diagnostic work, and if they seem honest, have them fix it, unless you think you can fix it yourself. Why am i losing power in my mondeo?

on those engines the egr valve gets blocked partial and does not close so it sucks in use gases and starves the engine of air at idle. so it dies. also craked vaccum hoses will do the same. check all hoses and the egr valve for leaks at idle.then clean the egr valveHow Can I Fix Discoloration on my Convertible's Top?
The emission control system begins at the air intake and ends at the tailpipe. The emission control system includes various sub-systems such as the positive crankcase ventilation system, evaporative emission control system, the exhaust gas recirculation system and exhaust catalyst, as well as the electronic controls that govern the fuel and ignition system. These components are combined to control engine operation for maximum engine efficiency and minimal exhaust emissions.
