You can get more air and fuel into the engine and make more power. Of course you have to get the exhaust out so the out flow from the engine needs to be less restrictive. You see more than two valves per cylinder as well all to increase volumetric efficiency of the engine. You can realize a slight fuel ecomomy improvement but it is usually negated by the increase in power.

When properly tuned and adjusted, two carbs provide more air and more fuel (same as above) resulting in more power. Most engines run just fine on one correctly adjusted carb. It gets difficult to keep both carbs synchronized with each other.

On a muscle car dual carbs are great because the front primary barrels are always working..... so 4 out of 8 barrels are working, then when you stomp on the pedal the other 4 kick in, now 8 barrels.... and yes it is for power and speed, you will of course use for gas.
