I know for sure I currently have 17" wheels on my 97 eclipse gsx but as I browse, I see wheels can be 17" x 7 and 17" x 7.5. I know the second number is the width of the wheel but I'm not sure what the width of my current wheels are.
(I didn't buy the car with the stock wheels on them.)

I dont want to buy a wheel and tire package because my tires don't need to be replaced yet. I'm also a little confused because I saw replicas of my current mitsubishi (2000-05) wheels are 17" x 6.5. Does that mean 17"x7 or 7.5 wouldn't fit on the tires.

To answer your earlier question the 2000 to 2005 Eclipse GT's and 97-99 manual transmission GSX's come with OE 17x6.5 rims. Nothing wider. I know because I worked for Mitsubishi during some that period and these are the kinds of things I pay attention to. So you certainly have 6.5-inch wide wheels, not 7's.More bad news, if you are currently using 205/40R17 tires, particularly if they are P205/40R17 80 you should get new tires immediately, even if they are not worn out.

The P205/40R17 80 (the last number, 80 indicates load capacity of the tire) has a maximum load capacity of just 882 lbs at its max inflation pressure of 35 psi. Your car requires a tire with a load capacity of 1,213 lbs. Now multiply that difference by 4 - that is how much under capacity your tires are!

Most tire manufacturers have junked their P-metric tires in 205/40R17 for an Extra Load (XL) verion in a Euro-metric size which reads: 205/40R17 84 or 205/40R17XL 84 so you may have these instead. Even if you have the Euro-metric sized extra-load version of this size your still screwed though. Max load capacity is achieved at a hefty 42 psi with 1,102 lbs - which is still almost 450 pounds shy of the factory requirement when you add up all four! Also, any 205/40R17 tire has a minimum approved rim width of 7.0 inches. I couldn't recommend using them on a 6.5-inch wheel although it is possible to squeeze them on if the installer knows his stuff. Besides all that, they are far smaller in overall diameter to the original tires which is going to make the speedometer and odometer very inaccurate (read faster). In every way, a really bad choice for this car. Really, whoever installed these is not a tire store I would ever go to. Totally unprofessional.

On the rims you have there are just a few good tire size choices. The first is the one Mitsubishi used - P215/50R17 90. These not only fit the 17x6.5 rims you currently have but it maintains the correct load carrying capacity (use 32 front and 29 rear PSI) and close enough to the overall diameter (for accurate odometer and speedometer) of the original wheels and tires that came on your car to be workable (they will ready slightly slow). The same tire in Euro-metric sizing (215/50R17 91 - no "P" in front) will also work at the same pressures.

P205/50R17 90 (or 205/50R17 91) isn't a bad choice either, in fact its even a bit closer to the stock diameter (no speedometer error) and you can use stock tire pressures to maintain proper load. Only problem is this is a rare size - really only used by some Mazda 3's so selection can be limited.

If you do opt at some point to go for wider rims (7.0 or 7.5 should fit just fine) a 215/45R17XL 91 tire at 38 front, 36 rear psi would be a great choice, or a P225/45R17 90 or 225/45R17 91 at the OE 32/29 psi pressures would be even better. Test fit first for clearance though.

The first # in a tire size is the width in mm. yours are 205 mm wide. That comes out to 8.07 inches wide. That is measures from the widest point on the sidewall of a tire. The 2nd # is the height of the sidewall in % of the width. your tires are 40% of 205 mm. tall (82 mm). That is 3.2 inches tall. The third # is the rim size (17 inches). The tire should always be a little wider than the rim, and a 17 is a 17 any which way. so, the answer is, yes, an 8 inch wide tire will fit on a 7 AND 7.5 inch wide rim.
