Take it to a mechanic.Usually you will want to drain the oil and fill it with clean oil and drive it awhile with the new oil so sludge doesn't build up and solidify in the pistons.

Also, you really should have someone start it up and warm up the engine every month or so. Otherwise the engine could freeze up. If you have to pay someone you can trust to do it, it will be money well spent.
Make sure you take the red cable off of the battery. It will save the charge for you and also make it hard to steal. Other than that, just make sure you change the oil when you get back and also put a bottle of moisture remover into the gas when you get back as well. Should be fine.

Remove battery, check condition of anti-freeze, put blocks under suspension (in case the tires go low) don't bother with oil until first restart(any oil you put in will drain to the bottom of the engine over that much time and it will be useless anyway unless you change to synthetic). Drain the radiator and engine block. Remove the spark plugs one at a time and squirt some WD-40 in each plug hole, then replace plugs. Change the oil & filter. Fill the gas tank all the way up and add the correct amount of Stabil. Take the battery out and store it somewhere dry (it may lose its charge anyway). Wash and wax the car and make sure there is no food left in the interior. Clean the interior out and put ArmorAll on the dash, etc. Get a car cover that breathes.
