1971 chevy 350?

Question:
My 350 is actin up. When I start it cold,I let it warm up. then kick the choke off and it idles fine, but give it gas (for the first 5 min.)it acts like its not runnin all cylinders. Then when you hold a steady RPM, just to keep it at a certain speed, it cuts in and out. Like its studdering. Any ideas? The engine has been built up quite a bit. 400 crank, bigger valves, port and polish punched 50
