If your car/truck got stuck in the sand, you should not have any engine related problems except for the power driven devices that attach on the engine, like your alternator, air conditioner, power steering pump, and maybe the water pump. I would think about bearing failure in these if any of the sand got into the bearings for the pulleys. Also, some of the front end joints could also get sand in the joint and cause pre-mature failure. Also, check the air filter. The engine itself should be relatively unharmed.
