There's a lot of safety issues to start with, and being injured or killed wouldn't be worth the risk. There's the risk that a passing car will run into you while your parked along the shoulder of the road. And there's the risk that the car will roll or fall on to you, especially if you happen to be on a hill. So of course use your cell phone to call a tow truck if possible. I wouldn't trust strangers that stop along the highway. Have them send a tow truck instead if you can't call the emergency highway assistance number yourself.Now, if you really want to learn how to change a tire so you'll have the option to do it in an emergency, start by practicing in a flat parking lot with a friend that knows what they're doing. You'll want to buy a mechanics 1/2 inch drive socket wrench head from Sears that fits the lug nuts on your car. Then get a 1/2 inch "breaker bar" wrench handle that's longer than a standard 1/2 inch socket wrench handle. It will give you the leverage to untighten the lug nuts. First practice with the new wrench and socket to see if you can begin to loosen the lug nuts just a little while the car and wheel is still sitting on the ground. If your not strong enough to loosen the lug nut, you need to carry a 3 foot pipe with you that is just big enough to slip over the breaker bar wrench handle.
