--It could be something as simple as the oil light "bulb" is loose in it's socket.
--The oil sensor could be working intermitently (electrical junk do that all the time). The sensor is on the rear engine cover. First make sure that the screw that holds the wire is tight. Then follow the wire up and make sure the connection is good with the wire harness.
--Next, change the sensor.
