You do not need 1000cc to pull a 340 pound rider. For you I would be more concerned with your height than weight. Just go to a bike shop and sit on a bunch of different bikes to see how they fit you. If you want to buy used this will still be usefulas you can then narrow down your search. I would go for a twin if I were you since they have an easy to use power delivery. You could certainly handle a 1000cc or so twin but something as small as a 650 twin would also pull you around fine, just not very fast.

Normally, I recommend smaller models for beginners just because the bikes generally get heavier as the cc's increase, but any of the touring models should accomodate your height and weight without you having any difficulty handling them - the Harley ElectraGlide, Honda Goldwing, Yamaha Royal Star line, Kawasaki Vulcan, etc. Victory is introducing a new touring bike this year that is similar in look to the Goldwing, however, for a starter bike, you might want to look at a used model.

Robert P is so completely wrong, sorry. For a beginner that just wants a commuter bike a Harley or gold-wing is about the exact opposite of what you should be looking at. Those bikes are better for experienced and longer-haul driving. It really depends on budget, I would look for something in the 750 twin range, get something cheap used, bring it to a shop & have it mechanically checked top to bottom. It would be dangerous for a 340lb rider to go with only 650cc.
The engine is generally scaled to the size of the bike. A big rider needs a big bike. Suppose the guy wants to take his 400lb wife for a ride? Or put a few groceries in the saddlebags?
A naked 340lb guy on 650cc is pushing its weight capability alone. Suppose he wears pants, boots, a helmet, and jacket? Add another 25-30lb.
