I'm 6'4" and about 210 lbs. and this is just a thought, but if you're bent on something sporty certainly check out bigger displacement bikes (Kawasaki zzr 1200, Honda cbr 1100xx).
If this is your first bike then check out some older sporty bikes first, I'm planning on purchasing an '88 Honda hurricane 1000 this spring and my impression is this; older sport bikes tend to have a more relaxed riding position, higher seat, lower pegs, not nearly as radical as what most manufacturers are trying for these days. The other upside to the older bikes is that they are cheaper and you won't feel nearly as bad when you dump it and total it out. Don't forget about aftermarket parts to modify your bike for the purpose of comfort, several companies make seats, adjustable rearsets (foot pegs) and handle bar risers. After or before the legs cramp? I am 6' and 250 after a few hours the pain go's away. Your height make a big difference. Buel American makes taller sport bikes go out and ride one of those. And don't forget Bmw while not as sporting bikes that last like cars.

As you can probably guess none of the "hard core" sport bikes are going to be comfortable on a cross country ride. This is why BMW, Honda, and others also make "sport touring" bikes that have a not quite so radical riding position. Because of your size you would probably be most comfortable either way in the large displacement bikes as they have larger frames in most circumstances as well. That gives them more length for you to stretch out and more distance to handlebars, etc. You can thankfully pick from a huge assortment of either the radical all out sport bikes, or the more sedate touring bikes that still have a "sporting" ride and handling. Only difference I feel is in how far or how hard you are going to be riding them on a "regular" basis,. It is the "regular" riding that should influence your decision. If you are only going to do some hard "twisties" on curvy roads one day a month with friends and ride it everywhere else the rest of the month you wouldn't want a hard core bike to fight city traffic day in and day out. If you are going to be doing most of your riding "canyon carving" or whatever then by all means get the most "beast" you can afford. No matter what check the frame sizes on the larger displacement bikes. Sometimes you will find the same frame size on some years between 750 and 1100 and such as for various reasons they often share frames with different engines. A little research into the specs should show this up easily.

I'm the same height and weight as you are. Go with the sport touring bikes. AS for the pain of riding for several hours, that is going to happen. The further you are bent over the handlebars, the more it will hurt. If you want to go cross country, get the big touring bikes, your legs will thank you.

Best thing to do is just go to a dealership's ride demo day and try each unit then pick one that suits you. Consumer reports do a great job on rating bikes for different rider styles. Best of Luck

Buy a bike that fits you. Something around a 1200 or better in size I'd say. I'm a Harley person so I'd seggest you check them out. Don't buy a sportster, get a softail model of some sort. You'll never regret it. The best part of owning a HD is value. Jap Crap only goes down in value. Buy a Harley and head to Sturgis,SD for the Black hills rally in August. You'll be hooked for life.
