What is 'zen' and whats it got to do with motorcycle maintenance?

This bike was set up for the dirt? Oh no you didn't!
Put the classic parts back on, the older bikes like the Honda Dream are very hard to get parts for, just the parts alone are worth some bucks to hardcore collectors.
Honda used to be required to stock parts for whatever bike they made, regardless of age. Once the founder was out of the picture though, this uneconomical service to owners was stopped. Your bike is becoming more valuable either as a bike or as parts. Hang onto it and wait for the right buyer, you may be surprised.
Some Honda dealerships are interested in antique Hondas as displays too, you might contact them and see if they are interested.

any one know what engine other than a 350 will fit in a 1985 atc 350x?

The 66 is considered a Late model dream. Its not going to fetch the pre 63 money. IF you or anyone else cut the rear fender off to make it like a dirt bike, you have nothing. take it apart and sell it in peices. The rear fender is a one peice thing, part of the frame. the condition of the chrome determines the value. exhaust is big money. If you have bad exhaust its not worth fixing. Its probably best parted out on ebay and get what you want. I am shocked you didnt blow the transmission out of it on the dirt, they arent strong. good Luck Value fluctuates on those, but knobby tires on it will end the value discussion, SO dont show any pics of it on ebay with knobby tires, take them off the rims first!!

Where can I buy an enclosed cabin scooter motorcycle?

I used to work at a motorcycle shop in Japan. We sold an alight shape 1966 Honda Dream for $6000(was about 10yrs ago, so it should be higher price by now). Kawasaki Z1 900 goes well above $10,000, no problem. Old bikes tend to be treated as cheap/starter bikes in U.S, and to me it's painful to see that... In Japan, classic bikes are sold heck of high prices like muscle cars in U.S. Yeah, any of '60s original Dream goes really high price(in Japan). Treat well on yours, and someone from Japan will say, "OAH!"
