If you want to fine tune a modern motorbike engine, you will require the correct analysing equipment and a rolling road. The correct equipment will allow you to see how much fuel is being injected for a given rev/speed and this can be changed to give the best ratio therefor getting the best from the engine.

Are there any recorded times of a car round the IOM TT track?

Most people take it to a garage with a rolling road and get them to set it up, but before you consider this you are as well purchasing a free flow exhaust system, a performance air filter and a power commander unit, otherwise there is little point in getting it tuned as there will be little gain if any.

Anyone been across the alps on a honda transalp?

If it is an older model of motorbike it is just a case of setting the carbs until they are flowing equally, just watch for the pinking of the engine when doing this as this must be avoided. Pinking (a noise not a colour change) is caused by not enough fuel and this will have a serious effect on the engine if riden like this for long.

If you want to increase performance there is lots of things you can do without teaching. better exhaust system can increase the BHP, K+N filter kit will increase airflow. Then there is to re jet the carbs, Dyna jet kits are popular for this, but unless you have some experience on carbs and mechanics i would recommend you geta qualified mechanic.
note: modifying your bike can void your warranty and even your insurance coverage.
